Oladi

I have always wanted to make fluffy pancakes in a very easy way, but somehow, what I tried so far never hit the spot for me. I wanted something that was really quick, fluffy, easy to match with my favorite jam, or with a savory mushroom sauce.

I have found about Oladi from Andreea from TasteBazaar, and I really wanted to try them out. They are a russian pancake, very easy to make, and very easy to serve sweet or savory, however you like them. Plus, I think they look really cute as well.

To make them you don’t need a lot of ingredients, and in many cases, you may already have them in your fridge and cupboard.

Ingredients:

  • 1 egg
  • 1 tsp baking soda
  • 150 g flour
  • 330 ml kefir or buttermilk
  • a pinch of salt

Method:

  1. Beat the egg. After you have beaten the hell out of that egg, add that pinch of salt, and beat a little more.
  2. Add the rest of the ingredients in a bowl, and lightly whisk. Don’t whisk it too hard because you will develop the gluten bonds and the result won’t be as light and fluffy as we want them.
  3. After everything is incorporated, if you want to add particular flavours like vanilla extract, rum essence, you may do it now, and lightly mix it in the bowl. I prefer to make them without any added flavour, as I can easily serve them with whatever I want on top.
  4. Heat a large pan, and add a bit of oil (I like to spray some coconut oil to have an even coverage) and take spoonfuls of batter and add them to the pan, forming the little pancakes.
  5. Cook them on that side until bubbles of air start to come up, and then flip them on the other side, and cook them until lightly brown.

How to serve:

You can go sweet or savory with these, but some of my favorites are:

  • homemade jam with cream
  • cream cheese with greens
  • mushroom sauce – this one is very easy to make, I will post a recipe soon
